Lamb’s lettuce, scallops and walnut oil

ingredients (serves 1 )

  • 2 scallops
  • 1 pinch of chopped shallot
  • chives
  • 1 soupspoon of walnut oil
  • lemon juice
  • salt, pepper
  • 50 g lamb’s lettuce
  • 4 to 5 walnut kernels

Recipe steps

Preparation :

Make a vinaigrette by mixing together salt, pepper, walnut oil, lemon juice, chives and shallots.
Slice the scallops and marinate them in the vinaigrette.
Season the lamb’s lettuce.

Presentation :

Make a dome with the lamb’s lettuce.
Decorate with the sliced scallops and walnut kernels.
Drizzle with a soupspoon of vinaigrette.
